Mint Chip (Protein) Ice Cream

I got a Cuisinart Ice Cream & Sorbet Maker  recently, to give myself more options for healthy desserts. As much as I love ice cream, it's loaded with sugar and saturated fat, and eating it more than once in a while just is not in line with my health and fitness goals.

I've been experimenting with protein ice cream as a satisfying dessert option, and way to help boost protein intake.

To make the ice cream, I used:

2 cups unsweetened almond milk
1 tsp vanilla extract

I blended all of it in a shaker bottle, just because clean up is easier than using an actual blender. But you could use a blender for this part, especially if you want to add fruit or other ingredients to the ice cream. Then, I sprayed the inside of the ice cream maker with non-stick cooking spray to prevent the ice cream from sticking as it cools. After assembling the ice cream maker, pour in the protein shake and let it churn for about 15-20 minutes.

I decided to add 1 tbsp of dark chocolate chips to mine. This mixture makes 2 servings, and can be stored in the freezer, as long as it is in an airtight container.  This ice cream was so delicious, and definitely hit the spot if you have a sweet tooth.

I think this is an especially great option for those in contest prep for figure/bikini competitions or those who are lactose intolerant, or really anyone who is trying to clean up their diet without feeling deprived.

Carbohydrates: 4 grams
Fat: 3.5 grams (all unsaturated)
Protein: 31 grams
